– 4 medium ripe tomatoes (about 500g total, grated and drained) 
– 1 medium grated onion
– 2 finely chopped garlic cloves 
– ¼ cup of chopped fresh mint
– ¼ cup of chopped fresh parsley
– 1 cup of (120g) all-purpose flour 
– 1 tsp of baking powder 
– Approximately 1 tsp of Celtic sea salt 
– ½ a tsp of black pepper 
– ½ a cup of olive oil (for frying, adjust as needed)
– 2 tsp of chili flakes

1. Prepare The Tomatoes & Onions: Grate the tomatoes and onion into a large bowl. Squeeze out excess liquid using a cheesecloth or your hands (this ensures crispiness!).

2. Mix Ingredients: Add garlic, mint, parsley, flour, baking powder, chili flakes, salt, and pepper to the bowl. Stir until a thick batter forms.

3. Fry: Heat olive oil in a pan over medium heat. Drop spoonfuls of the batter into the oil, flatten slightly, and fry for 2-3 minutes per side until golden and crispy.

4. Drain: Transfer to a paper towel-lined plate to remove excess oil. Serve warm!

1. Oil Absorption: Nutritional values assume 1-2 tbsp oil absorbed during frying. For a lighter version, bake at 400°F (200°C) for 15-20 minutes (spray with oil first).
