Ingredients

– Organic sweet potatoes
– Organic black beans
– Bell peppers
– Red onion
– Organic corn
– Fresh organic avocado
– Organic lime
– Organic coriander
– Spices (such as cumin, organic chili powder, garlic powder)
– Cooked rice

Instructions

1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Dice the organic sweet potatoes, bell peppers, and red onion into bite-sized pieces.
3. Place the diced sweet potatoes on the prepared baking sheet and drizzle with olive oil. Sprinkle with your favourite spices (we recommend cumin, chili powder, and garlic powder) and toss to coat.
4. Roast the organic sweet potatoes in the preheated oven for 20-25 minutes, or until tender and lightly browned.
5. While the sweet potatoes are roasting, rinse and drain the organic black beans and corn.
6. In a skillet over medium heat, sauté the bell peppers, red onion, organic black beans, and organic corn until heated through.
7. Once the organic sweet potatoes are done, assemble your burrito bowl by layering cooked rice, roasted sweet potatoes, sautéed veggies and beans, sliced organic avocado, and a squeeze of fresh organic lime juice.
8. Garnish with chopped organic coriander and any additional toppings of your choice, such as salsa or hot sauce.
9. Serve hot and enjoy!
