– 2 cans of drained & rinsed butter beans
– 1 can of coconut milk
– 1 diced onion
– 2 cloves of minced garlic
– 1 tbsp of curry powder
– 1 tsp of turmeric
– 1 tsp of cumin
– 1/2 a tsp of chili powder
– 1 tbsp of tomato paste
– 1 cup of vegetable broth
– 1/2 a cup of chopped cilantro

Vegan Creamy Butter Bean Curry Recipe Cooking Instructions

1. In a large pot, sauté onion and garlic until softened.
2. Add curry powder, turmeric, cumin, and chili powder. Stir for 1 minute.
3. Stir in tomato paste, coconut milk, and vegetable broth. Bring to a simmer.
4. Add butter beans and cook for 15 minutes.
5. Garnish with cilantro and serve with rice or naan.
