– Plant-Based Vanilla Ice Cream:
– 2 cans full-fat coconut milk
– 1/2 cup maple syrup
– 1 tbsp vanilla extract
– Salted Caramel Coffee:
– 1 cup strong brewed coffee
– 2 tbsp coconut sugar
– 1 tbsp vegan butter
– 1/4 tsp sea salt

1. Blend the coconut milk, maple syrup, and vanilla extract until smooth.
2. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
3. Transfer to a lidded container and freeze for at least 4 hours before serving.
4. In a small saucepan, melt the coconut sugar and vegan butter together until it forms a caramel sauce. Stir in the sea salt.
