– 3 ripe bananas (about 1 cup mashed)
– ⅓ of a cup of (80ml) melted coconut oil or vegetable oil
– ½ a cup of (100g) organic brown sugar or coconut sugar
– ¼ cup of (60ml) plant-based milk (e.g., pea milk, almond milk, oat milk, or soy milk)
– 1 tsp of organic vanilla extract
– (190g) 1 ½ cups of all-purpose flour
– 1 tsp of baking soda
– ½ a tsp of baking powder
– ½ a tsp of Celtic sea salt
– 1 tsp of ground cinnamon
– ½ a cup of (60g) chopped walnuts or vegan chocolate chips
Vegan Banana Bread Recipe Cooking Instructions
1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
2. Mash Bananas: In a large bowl, mash the bananas until smooth.
3. Mix Wet Ingredients: Add the melted coconut oil, sugar, plant-based milk, and vanilla extract. Stir until well combined.
4. Add Dry Ingredients: Sift in the flour, baking soda, baking powder, Celtic sea salt, and cinnamon. Gently fold the dry ingredients into the wet mixture until just combined. Avoid overmixing.
5. Add Mix-Ins: Fold in walnuts or vegan chocolate chips.
6. Bake: Pour the batter into the prepared loaf pan. Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
7. Cool: Let the banana bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
