– 4 large potatoes, peeled and grated 
– 1 small onion, grated 
– 2 tbsp of cornstarch 
– 1 tsp of garlic powder 
– 1 tsp of smoked paprika or smoked paprika substitute
– 1/2 a tsp of salt 
– 1/4 tsp of black pepper 
– 1/4 cup of chopped parsley 
– Oil for frying 

Vegan Potato Fritters Recipe (Extra Crispy) Cooking Instructions

1. Place the grated potatoes in a clean kitchen towel and squeeze out as much moisture as possible. 
2. In a large bowl, combine the grated potatoes, onion, cornstarch, garlic powder, smoked paprika, salt, pepper, and parsley. Then mix everything up well.
3. Heat oil in a frying pan over medium heat.
4. Take small handfuls of the mixture and shape them into flat patties.
5. Fry the patties in the hot oil for 3-4 minutes on each side, until golden and crispy.
6. Drain on paper towels and serve hot with your favourite dipping sauce.
