This is a Caavakushi Team original recipe. We named it the phantom citrus cucumber water infusion. It achieves a seemingly impossible culinary trick. It delivers a burst of bright orange warmth and a clean, mineral edge without clouding the water or altering its crystal clear appearance.

To make this completely unique, we use an “Osmotic Sugar-Filter” technique. Instead of squeezing orange and lemon juices directly into the pitcher—which would introduce cloudy pulp, fruit fibres, and a yellowish tint—we extract their essential flavour oils into a clear, filtered sea salt brine first. This brine is then strained through an ultra-fine cloth before being combined with ice cold water, leaving only the beautiful, floating green cucumber rounds visible to the eye.

– 1/2 of a large fresh orange zest only
– 1/2 of a fresh lemon zest only
– 1/4 of a teaspoon of flaky sea salt
– 1 tablespoon of pure agave nectar (or clear simple syrup)
– 1 liter of ultra-filtered or spring water (must be high-quality water for absolute clarity)

1. Invisible Flavour Extraction
Using a very fine microplane or zester, grate the outer skin of the half-orange and half-lemon directly into a small glass bowl. Be extremely careful to only grate the colored part of the skin; avoid the white inner pith, as it will introduce a bitter taste.

2. Osmotic Maceration
Add the flaky sea salt and the agave nectar directly to the citrus zest. Use the back of a metal spoon to firmly bruise and mash the zest into the salt and syrup for 2 full minutes. The salt and sugar acts osmotically, pulling the highly concentrated, clear essential oils out of the citrus cells. Let this mixture sit at room temperature for 10 minutes to create a potent, translucent syrup.

3. Primary Clarification
Pour 100ml of your filtered water into the bowl with the citrus syrup and stir vigorously until the salt is completely dissolved. To keep the water perfectly clear, pour this liquid through a fine-mesh coffee filter or a double layer of cheesecloth into a clean cup. Press down gently to extract the clear, flavoured liquid, leaving all the physical specks of zest behind in the filter.

4. Sculpting the Cucumber Rounds
Wash your cucumber thoroughly under cold water. Using a very sharp knife or a mandoline slicer, cut the cucumber into perfectly uniform thick rounds. Do not peel the cucumber, as the dark green outer ring is critical for a beautiful visual presentation.

5. Visual Assembly
Drop the sliced cucumber rounds into the bottom of a large, clean glass pitcher. If you want a striking look, you can gently press some of the cucumber slices against the inner glass walls of the pitcher so they “stick” in place.

6. The Final Hydration Blend
Pour the clarified citrus-salt liquid over the cucumber slices. Finally, top up the pitcher with the remaining 900 ml of ice-cold filtered water. Stir in a slow, circular motion with a wooden spoon so you do not bruise the cucumber slices.

7. Chilling Fusion
Place the pitcher into the refrigerator for exactly 1 hour before serving. During this time, the clear water will absorb the refreshing aldehydes from the cucumber slices, blending with the secret citrus oils and the tiny hint of sea salt.

8. Presentation
When poured into glasses, the water will look absolutely transparent and clear, as if it were regular tap water. The only visible elements will be the floating green cucumber wheels.
