Vegan Mulled Wine Recipe Info

Vegan Mulled Wine Ingredients
The Based & Flavour Core:
– You can use any dry vegan red wine. Here are the Caavakushi teams favs – Merlot, Cabernet Sauvignon, or a young Malbec. (Remember to always check label for vegan certification)
– 1 cup 120g of fresh or frozen raspberries (for colour, tartness, and fruit flavour)
– 1/2 a cup 120 ml of maple syrup (natural, rich sweetener)
– 1/2 a cup 120ml of cranberry or pomegranate juice (adds body and acidity)
The Spices & Aromatics:
– 1 medium navel orange (cut into thick slices)
– 6 green cardamom pods (lightly crushed to release seeds)
– 6 whole star anise
– 4 whole cloves
– 2 cinnamon sticks
– 1 tbsp of fresh ginger sliced (no need to peel)
– 1/2 a tsp of smoked paprika (sweet or hot will provide the unique, smoky element)
– Pinch of black pepper (freshly ground to enhance the depth of the spice)
Vegan Mulled Wine Cooking Instructions
1. In a large, non-reactive saucepan (like stainless steel or vegan enamel), combine the vegan red wine, raspberries, maple syrup, cranberry/pomegranate juice, orange slices, and all the spices: cardamom, star anise, cloves, ginger, smoked paprika, and black pepper.
2. Place the saucepan over low heat. Do not cover.
3. Slowly bring the mixture just to a gentle simmer. It is vital not to boil the mulled wine, as this will burn off the alcohol and compromise the delicate flavours of the spices. You should see light wisps of steam, but no rolling bubbles.
4. Once the wine is steaming, reduce the heat to the lowest setting and let it gently steep for 20-25 minutes. This allows the spices, especially the smoked paprika and cardamom, to fully infuse into the wine and fruit.
5. After 25 minutes, taste the wine. Adjust the sweetness with a little more maple syrup if necessary. The raspberries will have softened and partially dissolved, giving the wine a beautiful ruby-red hue.
6. Ladle the mulled wine directly into heatproof mugs or glasses, using a slotted spoon or ladle to leave the larger spices behind. Garnish each serving with two cinnamon sticks, a fresh raspberry and a new slice of orange.
High Carbohydrate Content
The majority of the caloric and carbohydrate content in mulled wine comes from the alcohol and the added sweetener (maple syrup). Fiber is low, as is typical for a strained beverage, and comes primarily from the raspberries.
