Vegan Greek Burger Recipe

Plant-Based Greek Burger Ingredients

Patties

– 1 1/2 cups cooked chickpeas, drained and rinsed
– 1/2 cup cooked quinoa
– 1/4 cup red onion, finely chopped
– 2 cloves garlic, minced
– 2 tablespoons fresh parsley, chopped
– 1 teaspoon dried oregano
– 1/2 teaspoon ground cumin
– Salt and pepper, to taste
– 2 tablespoons olive oil

Tzatziki Sauce

– 1 cup coconut yogurt
– 1/2 cucumber, finely grated and squeezed to remove excess moisture
– 2 cloves garlic, minced
– 1 tablespoon fresh dill, chopped
– 1 tablespoon lemon juice
– Salt and pepper, to taste

Bun & Fillings

– Whole wheat burger buns
– Sliced tomatoes
– Sliced red onion
– Lettuce or baby spinach leaves

Vegan Greek Burger Cooking Directions

Patties

1. In a food processor, combine cooked chickpeas, cooked quinoa, red onion, minced garlic, fresh parsley, dried oregano, ground cumin, salt, and pepper.
2. Pulse until the mixture comes together but still has some texture.
3. Form the mixture into the vegan Greek Burger patties using your hands. You should get about 4-6 patties, depending on the size.
4. Heat olive oil in a skillet over medium heat. Cook the patties for about 3-4 minutes on each side, or until they are golden brown and heated through.

Tzatziki Sauce

1. In a bowl, combine coconut yogurt, finely grated cucumber, minced garlic, fresh dill, lemon juice, salt, and pepper.
2. Mix well and taste to adjust seasoning. Refrigerate the sauce until ready to use.

Assembly

1. Toast the whole wheat burger buns.
2. Spread a generous amount of the vegan tzatziki sauce on the bottom half of each bun.
3. Place a cooked chickpea-quinoa patty on top of the sauce.
4. Top with sliced tomatoes, sliced red onion, and lettuce or baby spinach leaves.
5. Place the top half of the bun over the toppings.
