Obviously, the Caavakushi team wanted to make the Coconut Lassi accessible to the vegan community. That’s why we decided to go ahead and put a Caavakushi spin on things. We basically veganized it and turned it into a vegan coconut lassi! The process wasn’t actually as hard as we anticipated, and the results were delicious (even if we do say so ourselves)!

Caavakushi Vegan Coconut Sweet Lassi Recipe
Ingredients:
- 1 cup of coconut milk
- 1/2 a cup of coconut yogurt
- 2 tablespoons of coconut flakes & extra for garnishing
- 2 tablespoons of maple syrup or agave nectar (adjust to taste)
- 1/2 a teaspoon of ground cardamom
- Crushed ice
Instructions:
- In a blender, combine coconut milk, coconut yogurt, coconut flakes, maple syrup or agave nectar, and ground cardamom.
- Blend on high until all the ingredients are well combined and the mixture is smooth.
- Taste and adjust the sweetness or cardamom flavour, if desired.
- Add crushed ice to the blender and blend again until the ice is crushed and the lassi becomes chilled.
- Pour the vegan coconut lassi into serving glasses.
- Garnish with a sprinkle of coconut flakes on top.
- Serve immediately and savour the creamy and tropical flavours of the Caavakushi vegan coconut lassi!
Caavakushi Pro Tips
1. Some people like their lassi slightly watered down compared to others. If that’s you, we suggest adding more ice and a bit of water to weaken the mixture. This will lessen the potency of your drink. So you don’t end up with as strong, a taste of coconut.
2. On the other hand, if you’d like your drink to be thicker and creamier. We suggest adding more coconut milk and more coconut yogurt. Do this gradually and keep tasting every time you add more. Don’t go overboard with it as you may end up ruining the taste. Remember a little goes a long way!
3. To add that little extra je ne sais quoi to this sweet lassi we suggest adding a different texture. What we found to be a perfect fit for this drink is chopped pistachios and cashew nuts. Add them to your NutriBullet or any other blender that you may have and blend or grind to the consistency of that suits you. Garnish the drink by sprinkling them on top.
