It delivers the authentic Mediterranean, Balkan and Middle Eastern pastry experience—complete with an emerald-green pistachio centre, golden puffed top layers, and a sticky citrus glaze—without using honey or dairy butter.
Traditional baklava relies heavily on clarified dairy butter and honey syrup. To replicate that classic buttery crunch and glossy glaze while keeping it 100% vegan, we used a “Cultured Fat Laminate & Cold-Syrup Shock” technique. Brushing each sheet with melted vegan butter ensures flaky layers, while pouring cool citrus infused agave syrup over hot from the oven baklava seals in crunch without making the bottom soggy.

9. Pyramid Presentation
Carefully lift the cut diamond pieces. On a thick, natural wood-slice platter for a natural earthy presentation, stack the baklava pieces in a symmetrical multi-tiered pyramid. Drizzle extra golden syrup down the sides of the stack, and dust the top crowns and surrounding wood board with finely crushed pistachios. Serve at room temperature.
