Vegan Rosemary Shortcrust Pastry:
– 280g of plain all-purpose flour (plus extra for dusting)
– 140g of chilled vegan block butter (cut into small cubes essential for flaky pastry)
– 50g of icing powdered sugar (for a tender pastry)
– 1 tbsp of fresh rosemary (very finely minced)
– 2-4 tbsp of ice cold water (as needed to bring dough together)
– A pinch of fine sea salt
Vegan Orange Ginger Mince Filling:
– 1 cup 150g of dried mixed fruit (raisins, currants, sultanas)
– 1/2 a cup 75g of pitted medjool dates finely chopped (replaces the texture of suet)
– 1/4 cup 60ml of vegan orange liqueur or vegan whiskey (the unique boozy element)
– 1/4 cup of fresh orange juice
– 1 large orange zest only
– 3 tbsp of crystallized ginger finely chopped
– 1/4 cup of chopped walnuts or pecans, for a crunch
– 1/2 a tsp of ground allspice
– 1/4 tsp of ground clove
– 2 tbsp of dark brown sugar
Vegan Assembly & Glaze:
– 1/2 a tsp of plant milk (for brushing)
– 1 tsp of vegan demerara sugar (for sprinkling)
– 1 tbsp of vegan edible gold dust optional (for a unique finish)
Vegan Rosemary Orange Ginger Mince Pie Recipe Cooking Instructions
1. Prepare the Mince Filling (Day Before Recommended): Combine all the Mince Filling ingredients in a large bowl. Stir well. Cover and let it sit at room temperature for a minimum of 4 hours, or ideally, overnight in the refrigerator. This allows the dates to absorb the whiskey and the flavours to fully meld.
2. Make the Pastry: In a large bowl, rub the flour, salt, and chilled vegan butter cubes together using your fingertips until the mixture resembles coarse breadcrumbs. Stir in the icing sugar and finely minced fresh rosemary.
3. Form the Dough: Gradually add the ice-cold water, 1 tablespoon at a time, until the dough just comes together into a ball. Do not overwork. Flatten into a disc, wrap in cling film, and chill in the refrigerator for at least 30 minutes.
4. Assemble the Pies: Preheat the oven to 200C or 400F. Lightly grease a standard 12-cup muffin tin.
5. Roll and Cut: Divide the dough into two pieces (one larger for the bases, one smaller for the lids/stars). Roll out the larger piece to about 3mm thick. Use a cookie cutter (approx. 8cm diameter) to cut 12 bases and press them gently into the muffin tin cups.
6. Fill and Cap: Spoon a generous amount of the unique mince filling into each pastry case, filling it almost to the brim. Roll out the remaining pastry and cut 12 lids (stars, circles, or festive shapes). Place the lids gently on top. Crimp the edges or press down lightly to seal.
7. Bake: Brush the tops with a touch of plant milk and sprinkle with demerara sugar. Bake for 18-20 minutes, or until the pastry is golden brown.
8. Cool and Finish: Let the pies cool in the tin for 5 minutes before carefully transferring them to a wire rack to cool completely. For a unique finish, lightly dust with edible gold dust once cool.
Fibre, Fat & Carbohydrates
The fiber content is high for a pastry-based dessert, thanks to the large amount of dried fruit, especially the dates and walnuts, in the filling. The majority of the fat comes from the pastry’s vegan butter, and the carbohydrates are primarily from the flour and dried fruits.
