– 1/2 a tsp of agave nectar or maple syrup (balances the acidity and garlic)

– 1/4 tsp of white pepper (for a sharper, cleaner heat than black pepper)

Vegan Potato Waffles

1. Boil the Potatoes. Place the cut potatoes in a pot of cold, salted water. Bring to a boil and cook until fork-tender (about 15-20 minutes). Drain well and let them steam dry for 5 minutes.
2. Transfer the hot potatoes to a large bowl. Add the chilled plant-based butter cubes and mash until smooth, ensuring the butter is fully melted and incorporated. Do not over-mash, as this can make the waffle heavy.
3. In a separate medium bowl, whisk together the flour, nutritional yeast, garlic powder, cayenne pepper (if using), baking powder, salt, and black pepper.
4. Add the dry ingredient mixture to the mashed potatoes and fold gently until just combined.
5. Slowly add the plant milk, starting with 4 tablespoons, mixing until you have a thick, spoonable dough consistency, similar to a very thick pancake batter. Stir in the fresh chives.
6. Heat your waffle iron and lightly grease it with cooking spray or oil.
7. Scoop a generous amount of the mixture (amount depends on your iron size) onto the preheated waffle iron. Close the lid and cook for 5-8 minutes, or until the waffles are deeply golden brown and crispy. The cooking time will be longer than standard waffles due to the potato.
8. Transfer the cooked waffles to a wire rack in a warm oven (around 100C or 212F) while you prepare the remaining waffles and the dip.

Vegan Creamy Garlic Mayo

1. Preheat oven to 200C or 400F. Slice the top off the entire head of garlic to expose the cloves. Drizzle with a little olive oil, wrap in foil, and roast for 30-40 minutes, or until the cloves are soft and golden brown. Let cool slightly.
2. Squeeze the roasted, caramelized garlic cloves out of the skin into a small bowl. Mash them well with a fork until they form a smooth paste.
