Standard homemade hummus can sometimes turn out grainy or heavy. To achieve a smooth texture while boosting the protein count to over 10 grams per serving, we use a “Silken-Ice Aeration Emulsion” technique. By blending warm, peeled chickpeas with organic silken tofu, cold tahini, and ice-cold water, the fats and proteins whip into a light cream paste.
